Rum-Glazed Pineapple Chicken

Instructions
Prep first, cook second. Measure out 2.5 lb chicken thighs, 2 cup pineapple, 3 tbsp brown sugar, 2 tbsp soy sauce, and 1 tbsp ginger, and set them by the stove in the order you'll use them.
Get your seasonings ready too: garlic (3 cloves, minced), yellow onion (1 medium, diced), fresh thyme (4 sprigs), allspice (pimento) (1 tsp, ground), scallions (4, sliced), fresh ginger (1 tbsp, grated), scotch bonnet pepper (1/2, seeded (or whole, pierced)), and lime (1, juiced). Keep salt and pepper within reach — you'll season in layers as you go, not all at the end.
Place your largest skillet or pot on the burner over medium heat with a tablespoon of oil, and give it 2 minutes to come up to temperature — the oil should shimmer, not smoke.
Start the flavor base: cook garlic (3 cloves, minced), yellow onion (1 medium, diced), scallions (4, sliced), and fresh ginger (1 tbsp, grated) over medium heat for 3–4 minutes, stirring often, until soft and fragrant. Garlic goes in during the last 30 seconds so it never burns.
Add fresh thyme (4 sprigs) and allspice (pimento) (1 tsp, ground) straight into the hot pan and stir for 30–60 seconds until you can smell them. This "blooming" step is what separates a flat dish from a deeply seasoned one — add a splash of water or oil if the pan looks dry.
Sear the seasoned chicken skin-side down until golden. Use medium-high heat (about 7 out of 10 on the dial) and give it 6–8 minutes, turning or breaking it up once halfway through, until deeply golden.

Pour over the chicken and add pineapple chunks.
Simmer 20 minutes, spooning the glaze over until sticky. Simmer means low heat with small bubbles just breaking the surface — if it's boiling hard, turn the dial down a notch and leave the lid slightly ajar.
Don't leave anything on the counter: stir in 2.5 lb chicken thighs in the last 3–5 minutes of cooking so it warms through without overcooking.
Taste before it leaves the pan. Off the heat, finish with scotch bonnet pepper, lime, kosher salt, and black pepper, then adjust salt and pepper a pinch at a time until the flavors pop — fresh herbs and acid go in last so they stay bright.
