Instructions

  1. Prep first, cook second. Measure out 8 flour tortillas, 3 poblano peppers, 8 oz jack cheese, 1 onion, and 1 cup corn kernels, and set them by the stove in the order you'll use them.

  2. Get your seasonings ready too: garlic (3 cloves, minced), yellow onion (1 medium, diced), ground cumin (2 tsp), mexican oregano (1 tsp), ancho chili powder (1 tbsp), smoked paprika (1 tsp), fresh cilantro (1/4 cup, chopped), lime (2, juiced), and chipotle in adobo (1 tsp, minced (optional)). Keep salt and pepper within reach — you'll season in layers as you go, not all at the end.

  3. Place your largest skillet or pot on the burner over medium heat with a tablespoon of oil, and give it 2 minutes to come up to temperature — the oil should shimmer, not smoke.

  4. Start the flavor base: cook garlic (3 cloves, minced) and yellow onion (1 medium, diced) over medium heat for 3–4 minutes, stirring often, until soft and fragrant. Garlic goes in during the last 30 seconds so it never burns.

  5. Add ground cumin (2 tsp), mexican oregano (1 tsp), ancho chili powder (1 tbsp), smoked paprika (1 tsp), and chipotle in adobo (1 tsp, minced (optional)) straight into the hot pan and stir for 30–60 seconds until you can smell them. This "blooming" step is what separates a flat dish from a deeply seasoned one — add a splash of water or oil if the pan looks dry.

  6. Char the poblanos, peel, and slice into strips.

  7. Cook the onion and corn until lightly browned. Keep the burner at medium and cook 4–5 minutes, stirring every minute, until soft and translucent — not browned.

  8. Fill the tortillas with cheese, peppers, and the corn mixture.

  9. Griddle until the cheese melts and the tortillas crisp. Medium heat, 3–4 minutes per side; flip halfway once the underside is golden.

  10. Don't leave anything on the counter: stir in 1 cup corn kernels in the last 3–5 minutes of cooking so it warms through without overcooking.

  11. Taste before it leaves the pan. Off the heat, finish with fresh cilantro, lime, kosher salt, and black pepper, then adjust salt and pepper a pinch at a time until the flavors pop — fresh herbs and acid go in last so they stay bright.
