Instructions
Prep first, cook second. Measure out 3 can chopped clams, 4 potatoes, 2 cup cream, 4 bacon slices, and 1 onion, and set them by the stove in the order you'll use them.
Get your seasonings ready too: garlic (3 cloves, minced), yellow onion (1 medium, diced), smoked paprika (1 tsp), dried thyme (1 tsp), garlic powder (1 tsp), fresh parsley (2 tbsp, chopped), and lemon zest (1 tsp). Keep salt and pepper within reach — you'll season in layers as you go, not all at the end.
Place your largest skillet or pot on the burner over medium heat with a tablespoon of oil, and give it 2 minutes to come up to temperature — the oil should shimmer, not smoke.
Start the flavor base: cook garlic (3 cloves, minced) and yellow onion (1 medium, diced) over medium heat for 3–4 minutes, stirring often, until soft and fragrant. Garlic goes in during the last 30 seconds so it never burns.
Add smoked paprika (1 tsp), dried thyme (1 tsp), and garlic powder (1 tsp) straight into the hot pan and stir for 30–60 seconds until you can smell them. This "blooming" step is what separates a flat dish from a deeply seasoned one — add a splash of water or oil if the pan looks dry.
Crisp the bacon, then soften the onion in the drippings. Keep the burner at medium and cook 4–5 minutes, stirring every minute, until soft and translucent — not browned.
Add diced potatoes and the clam juice and simmer until tender. Simmer means low heat with small bubbles just breaking the surface — if it's boiling hard, turn the dial down a notch and leave the lid slightly ajar.
Stir in the clams and cream and warm gently without boiling.
Season with pepper and serve topped with crumbled bacon.
Don't leave anything on the counter: stir in 4 bacon slices in the last 3–5 minutes of cooking so it warms through without overcooking.
Taste before it leaves the pan. Off the heat, finish with fresh parsley, lemon zest, kosher salt, and black pepper, then adjust salt and pepper a pinch at a time until the flavors pop — fresh herbs and acid go in last so they stay bright.
Other ways to cook it
Air fryer
- Preheat the air fryer to 375°F for 3 minutes.
- Arrange food in a single layer with space between pieces — cook in two batches rather than crowding.
- Cook 12–18 minutes total for proteins, 10–14 for vegetables, shaking the basket or flipping halfway.
- Check 4 minutes early: air fryers run hot and small pieces finish fast.
Oven
- Preheat to 400°F with a rack in the center.
- Spread everything on a lined sheet pan in one layer, lightly oiled.
- Roast 20–25 minutes, flipping halfway, until edges are browned and proteins hit their safe temperature.
