Instructions
Prep first, cook second. Measure out 1.5 cup arborio rice, 1 lb mushrooms, 5 cup vegetable broth, 0.5 cup white wine, and 3 oz parmesan, and set them by the stove in the order you'll use them.
Get your seasonings ready too: garlic (3 cloves, minced), yellow onion (1 medium, diced), dried oregano (1 tsp), fresh basil (1/4 cup, torn), fresh rosemary (1 tsp, chopped), crushed red pepper (1/4 tsp (optional)), and good olive oil (2 tbsp). Keep salt and pepper within reach — you'll season in layers as you go, not all at the end.
Place your largest skillet or pot on the burner over medium heat with a tablespoon of oil, and give it 2 minutes to come up to temperature — the oil should shimmer, not smoke.
Start the flavor base: cook garlic (3 cloves, minced) and yellow onion (1 medium, diced) over medium heat for 3–4 minutes, stirring often, until soft and fragrant. Garlic goes in during the last 30 seconds so it never burns.
Add dried oregano (1 tsp) and fresh rosemary (1 tsp, chopped) straight into the hot pan and stir for 30–60 seconds until you can smell them. This "blooming" step is what separates a flat dish from a deeply seasoned one — add a splash of water or oil if the pan looks dry.
Brown the sliced mushrooms hard, then set aside. Use medium-high heat (about 7 out of 10 on the dial) and give it 6–8 minutes, turning or breaking it up once halfway through, until deeply golden.
Toast the rice in butter, then add the wine and let it absorb. Medium heat, 3–4 minutes per side; flip halfway once the underside is golden.
Add hot broth a ladle at a time, stirring, for 18 minutes.
Fold in the mushrooms, parmesan, and butter until creamy.
Taste before it leaves the pan. Off the heat, finish with fresh basil, crushed red pepper, good olive oil, kosher salt, and black pepper, then adjust salt and pepper a pinch at a time until the flavors pop — fresh herbs and acid go in last so they stay bright.
Other ways to cook it
Air fryer
- Preheat the air fryer to 375°F for 3 minutes.
- Arrange food in a single layer with space between pieces — cook in two batches rather than crowding.
- Cook 12–18 minutes total for proteins, 10–14 for vegetables, shaking the basket or flipping halfway.
- Check 4 minutes early: air fryers run hot and small pieces finish fast.
Oven
- Preheat to 400°F with a rack in the center.
- Spread everything on a lined sheet pan in one layer, lightly oiled.
- Roast 20–25 minutes, flipping halfway, until edges are browned and proteins hit their safe temperature.
