  • Breadcrumbs1 cup
  • Onion1
  • Ketchup0.5 cup

  • Garlic3 cloves, minced

Bloom in the pan first for depth.

  • Yellow onion1 medium, diced

The savory base of the dish.

  • Smoked paprika1 tsp
  • Dried thyme1 tsp
  • Garlic powder1 tsp
  • Fresh parsley2 tbsp, chopped

    Stir in off the heat.

  • Lemon zest1 tsp

    Brightens without extra salt.

  • Kosher saltto taste

Season in layers, tasting as you go.

  • Black pepperto taste

    Freshly cracked right before serving.

Heat is optional: leave the chili out entirely, add half for a gentle warmth, or double it if your table likes fire.

Instructions

  1. Prep first, cook second. Measure out 2 lb ground beef, 1 cup breadcrumbs, 1 onion, 0.5 cup ketchup, and 2 eggs, and set them by the stove in the order you'll use them.

  2. Get your seasonings ready too: garlic (3 cloves, minced), yellow onion (1 medium, diced), smoked paprika (1 tsp), dried thyme (1 tsp), garlic powder (1 tsp), fresh parsley (2 tbsp, chopped), and lemon zest (1 tsp). Keep salt and pepper within reach — you'll season in layers as you go, not all at the end.

  3. Preheat the oven to 375°F (191°C) with a rack in the center position, and let it heat a full 15 minutes before anything goes in — the beep comes early.

  4. Start the flavor base: cook garlic (3 cloves, minced) and yellow onion (1 medium, diced) over medium heat for 3–4 minutes, stirring often, until soft and fragrant. Garlic goes in during the last 30 seconds so it never burns.

  5. Add smoked paprika (1 tsp), dried thyme (1 tsp), and garlic powder (1 tsp) straight into the hot pan and stir for 30–60 seconds until you can smell them. This "blooming" step is what separates a flat dish from a deeply seasoned one — add a splash of water or oil if the pan looks dry.

  6. Heat the oven to 375°F and line a loaf pan.

  7. Mix the beef, breadcrumbs, grated onion, eggs, salt, and pepper.

  8. Press into the pan and spread ketchup over the top.

  9. Bake 50–55 minutes, rest 10 minutes, then slice. Bake on the center rack and rotate the pan halfway through so it cooks evenly. Ovens vary — start checking 5 minutes early.

  10. Taste before it leaves the pan. Off the heat, finish with fresh parsley, lemon zest, kosher salt, and black pepper, then adjust salt and pepper a pinch at a time until the flavors pop — fresh herbs and acid go in last so they stay bright.

Know when it’s done

  • Ground meats160°F all the way through
  • Beef steaks & roasts135°F medium-rare, 145°F medium, 160°F well done
  • Egg dishes160°F, or until the center is set and no longer runny

An instant-read thermometer is the one tool worth owning — insert it into the thickest part, not touching bone or the pan, and trust the number over the clock.

Other ways to cook it

Air fryer

  • Preheat the air fryer to 350°F for 3 minutes.
  • Arrange food in a single layer with space between pieces — cook in two batches rather than crowding.
  • Cook 12–18 minutes total for proteins, 10–14 for vegetables, shaking the basket or flipping halfway.
  • Check 4 minutes early: air fryers run hot and small pieces finish fast.

Stovetop

  • Use a heavy skillet over medium heat with a lid.
  • Sear 3–4 minutes per side, flip halfway, then cover and cook 8–12 more minutes on low.
  • Add a splash of broth or water if the pan gets dry.
