Classic Lasagna

Ingredients

Instructions
Prep first, cook second. Measure out 12 lasagna noodles, 1 lb ground beef, 2 cup ricotta, 3 cup tomato sauce, and 8 oz mozzarella, and set them by the stove in the order you'll use them.
Get your seasonings ready too: garlic (3 cloves, minced), yellow onion (1 medium, diced), dried oregano (1 tsp), fresh basil (1/4 cup, torn), fresh rosemary (1 tsp, chopped), crushed red pepper (1/4 tsp (optional)), good olive oil (2 tbsp), and fresh garlic (4 cloves, thinly sliced). Keep salt and pepper within reach — you'll season in layers as you go, not all at the end.
Preheat the oven to 375°F (191°C) with a rack in the center position, and let it heat a full 15 minutes before anything goes in — the beep comes early.
Start the flavor base: cook garlic (3 cloves, minced) and yellow onion (1 medium, diced) over medium heat for 3–4 minutes, stirring often, until soft and fragrant. Garlic goes in during the last 30 seconds so it never burns.
Add dried oregano (1 tsp), fresh rosemary (1 tsp, chopped), and fresh garlic (4 cloves, thinly sliced) straight into the hot pan and stir for 30–60 seconds until you can smell them. This "blooming" step is what separates a flat dish from a deeply seasoned one — add a splash of water or oil if the pan looks dry.
Simmer the beef with tomato sauce for 20 minutes. Simmer means low heat with small bubbles just breaking the surface — if it's boiling hard, turn the dial down a notch and leave the lid slightly ajar.
Mix the ricotta with egg, parmesan, and parsley.
Layer noodles, meat sauce, ricotta, and mozzarella twice over.
Cover and bake at 375°F for 40 minutes, uncovering at the end. Bake on the center rack and rotate the pan halfway through so it cooks evenly. Ovens vary — start checking 5 minutes early.
Taste before it leaves the pan. Off the heat, finish with fresh basil, crushed red pepper, good olive oil, kosher salt, and black pepper, then adjust salt and pepper a pinch at a time until the flavors pop — fresh herbs and acid go in last so they stay bright.

An instant-read thermometer is the one tool worth owning — insert it into the thickest part, not touching bone or the pan, and trust the number over the clock.

Air fryer
- Preheat the air fryer to 350°F for 3 minutes.
- Arrange food in a single layer with space between pieces — cook in two batches rather than crowding.
- Cook 12–18 minutes total for proteins, 10–14 for vegetables, shaking the basket or flipping halfway.
- Check 4 minutes early: air fryers run hot and small pieces finish fast.
Stovetop
- Use a heavy skillet over medium heat with a lid.
- Sear 3–4 minutes per side, flip halfway, then cover and cook 8–12 more minutes on low.
- Add a splash of broth or water if the pan gets dry.
