The savory base of the dish.

Heat is optional: leave the chili out entirely, add half for a gentle warmth, or double it if your table likes fire.

Instructions

  1. Prep first, cook second. Measure out 1.5 lb catfish fillets, 1.5 cup cornmeal, 4 hoagie rolls, 0.5 cup remoulade, and 2 cup shredded lettuce, and set them by the stove in the order you'll use them.

  2. Get your seasonings ready too: garlic (3 cloves, minced), yellow onion (1 medium, diced), smoked paprika (2 tsp), onion powder (1 tsp), garlic powder (1 tsp), dried thyme (1 tsp), cayenne pepper (1/4 tsp (optional)), and apple cider vinegar (1 tbsp). Keep salt and pepper within reach — you'll season in layers as you go, not all at the end.

  3. Place your largest skillet or pot on the burner over medium heat with a tablespoon of oil, and give it 2 minutes to come up to temperature — the oil should shimmer, not smoke.

  4. Start the flavor base: cook garlic (3 cloves, minced) and yellow onion (1 medium, diced) over medium heat for 3–4 minutes, stirring often, until soft and fragrant. Garlic goes in during the last 30 seconds so it never burns.

  5. Add smoked paprika (2 tsp), onion powder (1 tsp), garlic powder (1 tsp), and dried thyme (1 tsp) straight into the hot pan and stir for 30–60 seconds until you can smell them. This "blooming" step is what separates a flat dish from a deeply seasoned one — add a splash of water or oil if the pan looks dry.

  6. Season the catfish and dredge in spiced cornmeal.

  7. Fry in hot oil 3–4 minutes per side until crisp.

  8. Split and toast the rolls, then spread with remoulade. Medium heat, 3–4 minutes per side; flip halfway once the underside is golden.

  9. Layer fish, lettuce, tomato, and pickles and press closed.

  10. Don't leave anything on the counter: stir in 1.5 lb catfish fillets in the last 3–5 minutes of cooking so it warms through without overcooking.

  11. Taste before it leaves the pan. Off the heat, finish with cayenne pepper, apple cider vinegar, kosher salt, and black pepper, then adjust salt and pepper a pinch at a time until the flavors pop — fresh herbs and acid go in last so they stay bright.

Know when it’s done

  • Fish & shellfish145°F — fish flakes easily, shrimp turn opaque and curl

An instant-read thermometer is the one tool worth owning — insert it into the thickest part, not touching bone or the pan, and trust the number over the clock.

Other ways to cook it

Air fryer

  • Preheat the air fryer to 375°F for 3 minutes.
  • Arrange food in a single layer with space between pieces — cook in two batches rather than crowding.
  • Cook 12–18 minutes total for proteins, 10–14 for vegetables, shaking the basket or flipping halfway.
  • Check 4 minutes early: air fryers run hot and small pieces finish fast.

Oven

  • Preheat to 400°F with a rack in the center.
  • Spread everything on a lined sheet pan in one layer, lightly oiled.
  • Roast 20–25 minutes, flipping halfway, until edges are browned and proteins hit their safe temperature.
