Instructions
Prep first, cook second. Measure out 3 lb chicken pieces, 2 cup buttermilk, 3 cup flour, 1 tbsp paprika, and 3 cup frying oil, and set them by the stove in the order you'll use them.
Get your seasonings ready too: garlic (3 cloves, minced), yellow onion (1 medium, diced), smoked paprika (2 tsp), onion powder (1 tsp), garlic powder (1 tsp), dried thyme (1 tsp), cayenne pepper (1/4 tsp (optional)), and apple cider vinegar (1 tbsp). Keep salt and pepper within reach — you'll season in layers as you go, not all at the end.
Place your largest skillet or pot on the burner over medium heat with a tablespoon of oil, and give it 2 minutes to come up to temperature — the oil should shimmer, not smoke.
Start the flavor base: cook garlic (3 cloves, minced) and yellow onion (1 medium, diced) over medium heat for 3–4 minutes, stirring often, until soft and fragrant. Garlic goes in during the last 30 seconds so it never burns.
Add smoked paprika (2 tsp), onion powder (1 tsp), garlic powder (1 tsp), and dried thyme (1 tsp) straight into the hot pan and stir for 30–60 seconds until you can smell them. This "blooming" step is what separates a flat dish from a deeply seasoned one — add a splash of water or oil if the pan looks dry.
Soak the chicken in seasoned buttermilk for at least 2 hours.
Dredge each piece in well-seasoned flour and rest 10 minutes. Resting lets the juices settle — loosely tent with foil and don't skip it.
Fry at 325°F for 12–15 minutes per side until deep golden.
Drain on a rack and salt immediately.
Don't leave anything on the counter: stir in 3 lb chicken pieces, 1 tbsp paprika, and 3 cup frying oil in the last 3–5 minutes of cooking so they warm through without overcooking.
Taste before it leaves the pan. Off the heat, finish with cayenne pepper, apple cider vinegar, kosher salt, and black pepper, then adjust salt and pepper a pinch at a time until the flavors pop — fresh herbs and acid go in last so they stay bright.
Know when it’s done
- Chicken & turkey165°F in the thickest part, away from bone
An instant-read thermometer is the one tool worth owning — insert it into the thickest part, not touching bone or the pan, and trust the number over the clock.
Other ways to cook it
Air fryer
- Preheat the air fryer to 325°F for 3 minutes.
- Arrange food in a single layer with space between pieces — cook in two batches rather than crowding.
- Cook 12–18 minutes total for proteins, 10–14 for vegetables, shaking the basket or flipping halfway.
- Check 4 minutes early: air fryers run hot and small pieces finish fast.
Oven
- Preheat to 400°F with a rack in the center.
- Spread everything on a lined sheet pan in one layer, lightly oiled.
- Roast 20–25 minutes, flipping halfway, until edges are browned and proteins hit their safe temperature.
