Ingredients

Seasonings

Heat is optional: leave the chili out entirely, add half for a gentle warmth, or double it if your table likes fire.

Instructions

  1. Prep first, cook second. Measure out 3 lb oxtail, 1 can butter beans, 2 tbsp browning sauce, 1 onion, and 3 carrots, and set them by the stove in the order you'll use them.

  2. Get your seasonings ready too: garlic (3 cloves, minced), yellow onion (1 medium, diced), fresh thyme (4 sprigs), allspice (pimento) (1 tsp, ground), scallions (4, sliced), fresh ginger (1 tbsp, grated), scotch bonnet pepper (1/2, seeded (or whole, pierced)), and lime (1, juiced). Keep salt and pepper within reach — you'll season in layers as you go, not all at the end.

  3. Place your largest skillet or pot on the burner over medium heat with a tablespoon of oil, and give it 2 minutes to come up to temperature — the oil should shimmer, not smoke.

  4. Start the flavor base: cook garlic (3 cloves, minced), yellow onion (1 medium, diced), scallions (4, sliced), and fresh ginger (1 tbsp, grated) over medium heat for 3–4 minutes, stirring often, until soft and fragrant. Garlic goes in during the last 30 seconds so it never burns.

  5. Add fresh thyme (4 sprigs) and allspice (pimento) (1 tsp, ground) straight into the hot pan and stir for 30–60 seconds until you can smell them. This "blooming" step is what separates a flat dish from a deeply seasoned one — add a splash of water or oil if the pan looks dry.

  6. Season the oxtail overnight with garlic, thyme, and allspice.

  7. Sear the pieces until dark brown, then add water and browning sauce. Use medium-high heat (about 7 out of 10 on the dial) and give it 6–8 minutes, turning or breaking it up once halfway through, until deeply golden.

  8. Cover and braise low for 2.5 hours until falling off the bone.

  9. Add the beans and carrots for the last 20 minutes and serve over rice.

  10. Don't leave anything on the counter: stir in 1 onion in the last 3–5 minutes of cooking so it warms through without overcooking.

  11. Taste before it leaves the pan. Off the heat, finish with scotch bonnet pepper, lime, kosher salt, and black pepper, then adjust salt and pepper a pinch at a time until the flavors pop — fresh herbs and acid go in last so they stay bright.

  • Preheat the air fryer to 375°F for 3 minutes.
  • Arrange food in a single layer with space between pieces — cook in two batches rather than crowding.
  • Cook 12–18 minutes total for proteins, 10–14 for vegetables, shaking the basket or flipping halfway.

Oven

  • Preheat to 400°F with a rack in the center.
