Instructions

  1. Prep first, cook second. Measure out 1 lb ziti pasta, 2 jar marinara sauce, 15 oz ricotta, and 8 oz mozzarella, and set them by the stove in the order you'll use them.

  2. Get your seasonings ready too: garlic (3 cloves, minced), yellow onion (1 medium, diced), dried oregano (1 tsp), fresh basil (1/4 cup, torn), fresh rosemary (1 tsp, chopped), crushed red pepper (1/4 tsp (optional)), good olive oil (2 tbsp), and fresh garlic (4 cloves, thinly sliced). Keep salt and pepper within reach — you'll season in layers as you go, not all at the end.

  3. Preheat the oven to 375°F (191°C) with a rack in the center position, and let it heat a full 15 minutes before anything goes in — the beep comes early.

  4. Start the flavor base: cook garlic (3 cloves, minced) and yellow onion (1 medium, diced) over medium heat for 3–4 minutes, stirring often, until soft and fragrant. Garlic goes in during the last 30 seconds so it never burns.

  5. Add dried oregano (1 tsp), fresh rosemary (1 tsp, chopped), and fresh garlic (4 cloves, thinly sliced) straight into the hot pan and stir for 30–60 seconds until you can smell them. This "blooming" step is what separates a flat dish from a deeply seasoned one — add a splash of water or oil if the pan looks dry.

  6. Heat the oven to 375°F and lightly grease a baking dish.

  7. Cook the ziti in salted water until just shy of al dente, then drain.

  8. Toss the pasta with the marinara and ricotta, then spread it in the baking dish.

  9. Top evenly with mozzarella and cover loosely with foil.

  10. Bake for 20 minutes, uncover, and bake 10 minutes more until bubbling and golden. Bake on the center rack and rotate the pan halfway through so it cooks evenly. Ovens vary — start checking 5 minutes early.

  11. Don't leave anything on the counter: stir in 2 jar marinara sauce in the last 3–5 minutes of cooking so it warms through without overcooking.

  12. Taste before it leaves the pan. Off the heat, finish with fresh basil, crushed red pepper, good olive oil, kosher salt, and black pepper, then adjust salt and pepper a pinch at a time until the flavors pop — fresh herbs and acid go in last so they stay bright.
